Our story

Beef stew is comfort food for many. For us, it's more than that. It's a memory, a gesture, a smell that fills the house on a Sunday morning. But it's also something we wanted to do differently from the start.

STOOF·36 started as an experiment in our own kitchen. Belgian Blue beef, slow-cooked for hours in a rich dark beer, finished with a touch of pure Belgian chocolate. Not to 'modernise' anything — simply because that felt like the right direction. The result: familiar, yet surprising.

First batch — the first successful scaled production of STOOF·36

The name refers to our original preparation time: 12 hours cooking, 24 hours resting. Only then does it feel like our beef stew.

Beef stew is technically done in 3-4 hours, but we don't stop there. We keep cooking until the meat starts to pull apart, the flavour fully develops and the sauce penetrates deep between the meat fibres — building a consistency that is both familiar and intense. And just like grandmother's recipe, beef stew only becomes truly great after resting for 24 hours before being served. Only then is the flavour development complete. The result: STOOF·36 — 12 hours cooked, 24 hours rested.
